Sabzi Polo
Rice with Vegetables
2 1/2-3 fo. shoulder of lamb 1/2 cup chopped parsley
4 tbsp. butter 1/2 cup chopped celery leaves
1/2 tsp. salt 2 1/2 cups rice
1/4 tsp. pepper 1 1/2 tbsp. salt
1/2 tsp. cinnamon 2 qt. water
1/4 tsp. paprika 2 tbsp. salt
1/4 cup water 1/2 cup butter
1/2 cup chopped green onions
Have the butcher cut the lamb shoulder into chops. Clean and trim the fat off the chops. Melt butter in skillet. Sauté the chops with seasonings until the chops are done. Add water and let cook on low fire for 10 minutes. Wash, clean, and chop the vegetables. Put them aside. Cook rice as in directions for chelo (see p. 65). When you come to step 6 of the directions for chelo, after putting half of the rice in the pot, arrange meat and some of the vegetables in alternating order until the top layer is covered with the rice. Cover and cook as directed for chelo. Delicious when served with yogurt.
